12 large eggs
1/4 cup milk
1/2 cup chopped onion
1/2 cup red bell pepper
2 cups chopped baby spinach
1/2 teaspoon McCormick® Coarse Ground Black Pepper
1 package (14 ounces) McCormick® Grill Mates® Smoky Applewood Loop Sausage, quartered lengthwise and cut into 1/2 inch pieces
2 cups shredded cheddar cheese, divided
1. PREHEAT oven to 350°F. Beat eggs, milk and pepper in large bowl. Add vegetables, sausage and 1 cup of cheese; mix well.
2. SPRAY lightly 18 muffin cups with no stick cooking spray. Spoon about 1/3 cup egg mixture into each cup. Sprinkle with remaining cheese.
3. BAKE 20 to 25 minutes or until eggs are set and top is bubbly and golden brown. Run small knife or spatula around each cup to loosen. Let stand 5 minutes before serving.
