Smoky_Mesquite_Sausage_Cornbread

Ingredients:

2 tsp. oil
1 pkg. (14 oz.) McCormick®Grill Mates® Mesquite Smoked Sausage, cut into 1-inch slices
1 medium green bell pepper, chopped
1 medium onion, chopped
1 can (15 1/2 oz.) pinto or red kidney beans, drained and rinsed
1 can (14 1/2 oz.) diced tomatoes, undrained
1 can (8 oz.) tomato sauce
1 pkg. (8 1/2 oz.) corn muffin mix
1 pkg. (8 oz.) shredded Mexican cheese blend (2 cups), divided

Preparation:

1. HEAT oil in large skillet on medium-high heat. Add sausage, bell pepper and onion; cook and stir 5 minutes. Stir in beans, tomatoes and tomato sauce. Bring to boil on medium heat. Remove from heat. Stir in 1 cup of cheese. Set aside.
2. PREPARE corn muffin mix as directed on package. Drop small spoonfuls of batter over sausage mixture. Cover.
3. COOK on medium-low heat 15 minutes or until corn bread is cooked through. Sprinkle with the remaining cup of cheese. Cover. Cook on low heat until cheese is melted.
